Caponata is an eggplant dish that is eaten at all temperatures (hot, cold, or room temperature), either as an appetizer spread or a side dish. The eggplant is cooked with tomatoes, celery, onions, and capers in a sauce made with olive oil and red wine vinegar. Some recipes call for the addition of green olives, pine nuts, and raisins as well.
